Chipotle Lime Chicken Chili

A new take on white chicken chili with crunchy green cabbage, jalapenos, and lime.

To make cooking a breeze, measure out all spices into a small dish beforehand so when it's time to add them, you can toss them in all at once.

What You'll Need

  • 1 Kevin’s Natural Foods Chipotle Lime Chicken

  • 1 can full fat coconut milk

  • 1-2 jalapenos, diced (depending on desired heat level)

  • 2 cups (1/4 head) green cabbage, thinly sliced

  • 2 stalks celery, diced

  • 4 cloves garlic, minced

  • 1 yellow onion, diced

  • 1 tsp coriander

  • 1 tsp oregano

  • 2 tsp chili powder

  • 1/2 tbsp cumin

  • juice of 1 lime

  • 1/4 tsp salt

  • 4 cups vegetable or chicken broth

  • 1 tbsp olive or avocado oil

  • Optional garnishes: sliced avocado, chopped cilantro

Cook It Up!

    Prep vegetables. Drain Kevin’s Sous-Vide Chicken, transfer to a bowl and shred using two forks, set aside.

    Heat large pot on medium heat, add oil. Then add onions, celery, garlic, and jalapenos to pot, cook 5 min or until soft and starting to brown.

    Add in coriander, oregano, chili powder, cumin, salt, and pepper, stir to combine and cook 1-2 min until fragrant.

    Add in broth, coconut milk, shredded chicken, Kevin's Chipotle Lime Sauce, and sliced cabbage, bring to boil and simmer for 15 minutes.
