Ingredients
Kevin’s Natural Foods Thai Chicken Panang
2 tbsp olive oil (divided)
1 red bell pepper, sliced
1 orange bell pepper, sliced
1/4 cup basil, sliced into ribbons
1 scallion, thinly sliced
Serve over/with: cooked basmati rice
Optional: crushed peanuts, lime wedges

Cook Kevin’s Natural Foods Chicken Panang according to package instructions. Remove from the pan.

Add remaining olive oil to the pan, then add the bell peppers over medium-heat. Cook for 2-3 minutes until soft, then add the chicken back to the pan. Stir to combine.

Serve over rice. Garnish with basil, scallions, and crushed peanuts. Serve with additional lime wedges by the side if desired.
