Korean BBQ Beef Bowl

This Korean BBQ Beef will soon become a weeknight must-have! It's packed with protein from the grass-fed Korean BBQ Beef and perfectly fried egg. Top it with veggies and sauces you have in the fridge! This will not disappoint.

Ingredients


Kevin's Natural Foods Korean BBQ Beef
1 tbsp toasted sesame oil
2 cups rice, cooked
1 cup spring peas, halved lengthwise
3 radishes, thinly sliced
3 scallions, thinly sliced
2-4 eggs, fried

Spicy Mayo:
1⁄4 cup paleo mayo
1-2 tbsp sriracha or hot sauce
1 tbsp lime juice

Cucumber Salad:
4 persian cucumbers, thinly sliced
1 tbsp rice vinegar
1 tsp toasted sesame oil
1/2 tsp red pepper flakes
1⁄4 tsp salt

Instructions

    Add cucumber salad ingredients into a bowl and toss together. Taste for salt. Place in the fridge to marinate.

    Heat a large non-stick skillet over medium high heat. Add 1 tbsp toasted sesame and cook Kevin’s Korean BBQ Style Beef according to package instructions.

    While the beef cooks, whisk spicy mayo ingredients together in a small bowl until smooth.

    To serve, add a base of rice to each bowl. Top with beef, cucumber salad, spring peas, radishes, scallions, and a fried egg. Drizzle with spicy mayo and toasted sesame seeds. Enjoy!
