Ingredients


Kevin's Natural Foods Thai Coconut Sauce
1 lb leftover turkey, diced
1 yellow onion, diced
2 large carrots, diced
3 stalks celery, diced
4 cloves garlic, minced
1/4 tsp salt, divided
2 tbsp tomato paste
2 tsp dried rosemary
2 tsp dried thyme, plus more for garnish
1 package Kevin's Mashed Caluiflower
1 tbsp avocado or olive oil, optional: more for brushing on top

Instructions

    Preheat oven to 400F

    If using a glass baking dish, decrease cooking time by 5-10 minutes but still look for browning on top

    Heat large oven-safe saucepan on medium heat, add 1 tbsp avocado or olive oil.

    Add in onion and pinch of salt (1/8 tsp), cook 3 minutes

    Add in carrots, celery, garlic, and another pinch of salt, cook 3-4 minutes

    Add in tomato paste, rosemary, and thyme, stir until evenly coated, cook 1 minute until fragrant

    Add in diced turkey and Kevin’s Thai Coconut Sauce, stir until combined

  • 7

    Turn off heat and squeeze mashed cauliflower packets on top (if you don't have an oven safe pan, transfer to baking dish) then use a spoon to spread out evenly

    Optional: brush top with avocado or olive oil

    Cook, uncovered, for 30-35 minutes until top starts to brown

  • 10

    Top with additional thyme and serve
