Kevin’s Natural Foods Peppercorn Steak Tips
2-3 romaine hearts, roughly chopped
3 Persian cucumbers, thinly sliced
1 cup cherry tomatoes, halved
7oz feta, crumbled

½ cup cucumber, finely grated and drained of excess liquid
1 cup greek yogurt
½ tbsp extra-virgin olive oil
2 garlic cloves, grated
¼ teaspoon sea salt
3 tbsp dill, chopped
1 tbsp mint, chopped
1 tbsp lemon juice
Freshly cracked black pepper, to taste
Pickled Red Onion (optional):
½ red onion, thinly sliced
½ cup red wine vinegar
¼ tsp salt
¼ tsp sugar

    Into a small jar place the red onions, red wine vinegar, salt, and sugar. Mix, seal, the jar and set aside. Can also be prepped in advance and placed in the fridge.

    Cook the Peppercorn Steak TIps according to package instructions. Set aside to cool slightly.

    To a medium bowl, add the tzatziki ingredients. Mix until smooth. Taste for salt.

    To serve, fill each bowl with romaine lettuce, top with cucumber, tomatoes, feta, pickled red onions, tzatziki, and Peppercorn Steak Tips. Enjoy!

    Leftover tzatziki can be stored in a sealed container in the fridge for up to a week.
