Ingredients
Kevin’s Natural Foods General Tso’s Chicken
1/2 tbsp avocado oil
6 cups chopped kale, or 2 bunches of kale with the vein removed
1 cup multi-colored mini peppers
1/4 cup scallions
1/4 cup cilantro or basil leaves
1 tablespoon toasted sesame seeds
1 tablespoon fresh lime juice.

Prepare the kale. Bring a pasta pot of salted water to a boil. Add kale and blanch for 2 minutes or until softened. Drain in a colander.

Prepare Kevin’s General Tso’s Chicken. Heat skillet over MEDIUM-HIGH for 1 minute and add 1/2 tbsp preferred cooking oil. Break chicken strips apart by massaging the chicken pouch before opening. Cut open pouch, thoroughly drain chicken broth, and discard.

Add chicken and mini peppers to a hot skillet. Cook the chicken and peppers, on MEDIUM-HIGH, for 1 minute without stirring. Add scallions and kale and simmer on LOW for 1 minute. Remove from heat.

To serve, divide General Tso’s Chicken and Kale into 3 or 4 bowls. Garnish with cilantro or basil. Sprinkle with sesame seeds and lime juice.
