What You'll Need
Kevin's Korean BBQ-Style Chicken
3 mini cucumbers or 1 regular cucumber, thinly sliced
1/2 tsp tamari or soy sauce
1 tbsp rice vinegar
1/2 tbsp raw honey (optional)
1/2 tsp sesame seeds
1/4 tsp chipotle powder
1/4 tsp crushed red pepper flakes
1/4 tsp garlic powder
Cook It Up!
Cook chicken according to package directions
Mix tamari, rice vinegar, sugar, sesame seeds, and garlic powder together in a bowl, add the chipotle powder and red pepper flakes slowly, tasting as you go to achieve your desired spice level
Pro tip: Add more crushed red pepper to the cucumber salad to crank up the heat if you like a kick!
Pour mixture over the sliced cucumbers and stir to combine
Serve cucumber salad with the chicken and cauliflower rice if desired
