1 cup brown rice
1 large slightly ripe avocado, cut into chunks
1 cup diced mango
½ red bell pepper, finely diced
¼ cup finely diced red onion
½ jalapeno, seeded and minced
¼ cup fresh chopped cilantro
Juice of 1 lime
Cook brown rice according to package instructions.
In a medium sized bowl, add avocado chunks, diced mango, diced red bell pepper, diced red onion, minced jalapeno, chopped cilantro, and lime juice. Mix to combine. Set aside.
Cook Kevin’s Cilantro Lime Chicken according to package instructions.
To serve, add ½ cup of brown rice, avocado mango salsa, and 1 cup of Kevin’s Cilantro Lime Chicken to a bowl. Garnish with extra cilantro if desired.
Repeat step 4 to create 2 bowls.
