Kevin’s Natural Foods Chicken Chile Rojo
3 bamboo skewers
1 large zucchini, cut into 1⁄2 inch thick coins
1 large summer squash, cut into 1⁄2 inch thick coins
8 large white mushrooms, cut in half
6 ounces cherry tomatoes

Cut all vegetables as directed in the ingredients. Add the zucchini and summer squash coins, the mushrooms, and cherry tomatoes to a large bowl. Add 1⁄2 of the chili rojo sauce to the vegetables. Toss until well coated. Set aside.

Drain and separate Kevin’s Sous-Vide chicken into large cubes. Set aside.

To assemble, load the vegetables and sous-vide chicken onto the skewers. Start with the mushroom, then zucchini, summer squash, cherry tomato, and chicken cube.

Continue to alternate the vegetables and chicken until the skewer is full.

Brush the remaining chili roji sauce over the skewers. Place the skewers in the air fryer basket.

Cook for 10 minutes at 350 degrees. After 10 minutes, flip the skewers. Cook for an additional 7-10 minutes.
