BBQ Pulled Chicken Stuffed Sweet Potatoes

Our microwave method of preparing sweet potatoes and BBQ pulled chicken will put dinner on the table in 15 minutes! Perfect for your weeknight’s dinner!

Ingredients


Kevin’s Natural Foods Pulled Chicken
2 (12 oz) large organic sweet potatoes, wash and dry
1 lime, juice and zest
1 orange, juice and zest
6 tbsp sour cream, see *Paleo Tip for alternative
1 scallion, chopped
Salt and pepper

    Prepare the sweet potatoes. Pierce sweet potatoes with a fork five times. Place sweet potatoes on a microwave-safe plate. Cook on HIGH for 7-8 minutes. If the microwave does not have a rotating turntable, turn the sweet potatoes after 3 minutes for even cooking. The sweet potatoes are ready when a fork can easily pierce to the center.

    Microwave Tip: *If the sweet potatoes are not done after 7 minutes, continue to microwave in 30 second increments. *Be sure to use oven mitts when removing the plate of sweet potatoes from the microwave . *Make adjustments of microwave time dependent on the size of the sweet potatoes!

    After the sweet potatoes are done cooking, do not slice open until ready to top. Place a clean dish towel over the uncut sweet potatoes to allow the inside to continue to steam inside. This method will allow the skin to become extra soft and delicious.

Orange-fleshed sweet potatoes are one of the richest natural sources of beta-carotene, a plant-based compound that the body converts into Vitamin A. Vitamin A is critical in keeping a healthy immune system!

    Prepare the pulled chicken. Open the Kevin’s Pulled Chicken pouch and squeeze into a microwave-safe bowl. With two forks break up any large pieces of chicken. Cover bowl, and microwave chicken for 1 minute. Stir chicken, and continue to microwave at 20 second increments until hot. Keep the pulled chicken in a covered bowl until ready to serve. Stovetop will always be the most delicious, but if you are in a pinch, microwave will work.

    To serve: Slice the sweet potatoes in half lengthwise. Use a fork to rough up the inside of the sweet potato. Drizzle half of the lime juice and orange juice over the 4 sweet potato halves, and sprinkle with salt and pepper. Evenly dollop sour cream onto each sweet potato.

    Paleo Tip: Mix avocado or paleo mayonnaise with lime juice and seasoning for a creamy alternative to sour cream.

    Divide the BBQ Pulled Chicken on top of the sweet potatoes. Squeeze additional lime and orange juice, as desired. Garnish sweet potatoes with scallions and citrus zest; salt and pepper to taste.

    Spice it up: Sprinkle crushed pepper flakes over the sweet potatoes or add it when heating the chicken!
