What You'll Need
2 10.7 ounce packages of zucchini noodles
1 small onion, minced
1 TBS thinly chopped chives
1 TSP Red Pepper Flakes
Preferred cooking oil
Salt and Pepper, to taste

Prepare your chicken for cooking by gently massaging the package and separating the chicken into strips. Open the bag and drain the natural broth. Set aside.

Heat 1 TSP of your favorite oil over MED-HIGH heat in a large sauté pan. Once oil shimmers, add your minced onions, zucchini noodles, chives, and red pepper flakes. Season with salt and pepper and sauté everything together for 5 minutes.

As the noodles are coming up to heat, in another large sauté pan, prepare Kevin's Thai-Style Coconut Chicken according to package directions.

Reserve a TBSP of the sauce from the pan with the chicken and add it to the pan with the zucchini noodles. Toss to coat.

The noodles and chicken should finish at approximately the same time. Divide the noodles between two plates, top with your saucy Thai-Style Coconut Chicken and finish with reserved chives and red pepper flakes. Enjoy.
