For the Chimichurri:
1 C cilantro
1 C parsley
1⁄2 tsp salt
1⁄4 tsp pepper
1⁄2 tsp crushed red pepper
1 TBSP red wine vinegar
1⁄3 C olive oil

1⁄4 C Pomegranate Arils

    Cook the Kevin's Natural Foods Peppercorn Steak Tips according to the package directions

    Heat the Mashed Cauliflower according to the package directions.

    In a blender or food processor combine the cilantro, parsley, mint, salt, pepper, red wine vinegar, and olive oil. Pulse until well combined but still slightly chunky.

    To Serve spoon the steak tips over the mashed cauliflower, drizzle the chimichurri over the steak, and top with pomegranate arils.
