What You'll Need

  • 1 package Kevin’s Natural Foods Mashed Cauliflower

  • 2 large eggs

  • 1/2 cup finely diced red pepper

  • 1/2 cup shredded parmesan cheese of your choice, plus more for topping

  • 1/2 cup whole wheat breadcrumbs

  • 2 tablespoons sliced green onions

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon freshly ground black pepper

Cook It Up!

    Preheat oven to 375ºF.

    Combine all ingredients together in a large bowl and stir until combined.

    Scoop mixture over heavily greased muffin tins until almost full. Top with a sprinkle of parmesan cheese over each cup.

    Bake for 20-25 minutes until golden brown on top.
