1 package Kevin’s Natural Foods Mashed Cauliflower
2 large eggs
1/2 cup finely diced red pepper
1/2 cup shredded parmesan cheese of your choice, plus more for topping
1/2 cup whole wheat breadcrumbs
2 tablespoons sliced green onions
1/2 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper

Preheat oven to 375ºF.
Combine all ingredients together in a large bowl and stir until combined.
Scoop mixture over heavily greased muffin tins until almost full. Top with a sprinkle of parmesan cheese over each cup.
Bake for 20-25 minutes until golden brown on top.
Let cool in pan for 5 minutes before gently transferring to a serving tray.
Store in fridge for up to 4 days or freeze up to 3 months. Feel free to enjoy hot or cold!
