Pat your scallops dry with a paper towel. Season lightly with Kevin’s Seafood Seasoning and set aside.
Drying the scallops prior to cooking will actually prevent them from sticking to the pan!
Heat pan on HIGH for 1 minute, and add 1 TBSP of your favorite cooking oil. Add chopped broccolini and cook for 3 minutes or until tender, stirring occasionally. Set aside in bowl.
Time for the scallops! Add 1 TBSP of oil to the same hot pan. Add your scallops and cook for approximately 3 minutes, or until opaque. Be sure to not overcook!
Add broccolini back to the pan with the scallops, and add Kevin’s Lemongrass Basil Sauce. Heat for 2 minutes.
Place the scallops, broccolini, and remaining sauce on your plates. Garnish with fresh cilantro.
