Kevin's Natural Foods Pork Belly With Citrus Teriyaki Glaze
8 oz wide rice noodles, cooked
2 small zucchini
1⁄4 cup peanuts
1⁄4 cup scallions, chopped
1⁄2 tsp salt
To garnish: sesame seeds, cilantro, scallions, lime juice
Trim the ends off each zucchini. Using a vegetable peeler, cut thin lengthwise strips. Place the zucchini on a plate lined with a paper towel. Sprinkle salt over them and gently toss with your hands. The salt will draw out extra moisture. Set aside.
Cook Kevin’s Pork according to package instructions. Turn heat to low. Using a spatula, break up the pork into smaller pieces and toss in cooked rice noodles, zucchini strips, scallions, and peanuts into the pan. Using tongs, gently toss together.
Serve immediately, garnishing with sesame seeds, cilantro, scallions, and a squeeze of lime juice. Enjoy!
