Ingredients
1 pouch of Kevin’s Natural Foods Lemon Herb Sauce
4-5 bone-in, skin-on chicken thighs
1 ½ tbsp olive oil
1 large yellow onion, peeled and diced
1 cup dry long-grain white rice
2 cups chicken stock
1 1/4 tsp dried oregano
5 cloves garlic, minced
3/4 tsp salt
1/2 tsp black pepper
lemon slices, optional
fresh minced parsley, for garnish
extra lemon zest, for garnish

Add olive oil to a large skillet over medium-high heat. Add the chicken thighs, skin side down, to the pan. Cook 1-2 minutes per side. Pour the sauce over the chicken, then remove the chicken to a plate.

Reduce heat to medium and add the onion to the pan. Cook 3-4 minutes, until softened and slightly charred. Add garlic and cook for 1 minute. Add rice, chicken stock, oregano, salt and pepper. Stir together and cook for 1 minute.

Place chicken thighs on top, then cover and simmer over medium-low heat for 20-25 minutes until liquid is dissolved.

Garnish as desired and serve.
