Kevin’s Natural Foods Chicken Chile Verde
12 ounce Monterey Jack Cheese
1 cup sour cream
6 medium tortillas
cilantro, chopped for garnish
scallions, chopped for garnish
1 medium tomato chopped for garnish
Preheat the oven to 425 F degrees.
In a large skillet, cook Kevin’s Natural Foods Chicken Chile Verde according to package instructions. *Only use 1⁄2 of the sauce pouch* Set the remaining sauce aside.
In a small bowl, add 1 Tbsp of remaining sauce and sour cream. Mix well.
Spread the sour cream mixture into an 8x8 inch baking dish out evenly.
Take a tortilla, top with a couple of tablespoons of the Chicken Chile Verde, sprinkle with cheese, then roll it up and place over the sauce in the baking dish. Continue with all the tortillas until they are all filled and rolled.
Pour the remaining sauce over the top of the tortillas, then sprinkle the remaining cheese evenly over the top
Place the dish in the oven and bake for 25 minutes.
Top with chopped cilantro and scallions before serving.
Serve immediately with salsa if desired.
